Ricotta Berry Muffins

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar

  • 1/4 tsp salt
  • 1/2 cup ricotta cheese (whole milk or part-skim)
  • 1/2 cup milk (or any milk substitute)
  • 1/4 cup vegetable oil (or melted coconut oil)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup mixed berries (fresh or frozen; if using frozen, do not thaw)

Instructions:

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.

  2. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.

  3. In another bowl, mix together the ricotta cheese, milk, vegetable oil, egg, and vanilla extract until smooth and well combined.
